Soapstone, also known as soapstone, is a metamorphic rock widespread throughout the globe and, in Italy, especially in the Northern regions such as Piedmont and Liguria. In nature it is present in different colors ranging from red, to green, to black.

Why cook with soapstone and lava stone plates

One of the most important characteristics of soapstone is its resistance, both to thermal excursion and to direct heat. This type of plate resists fire and does not deteriorate when exposed to high temperatures; the heat conduction and heat storage capacity is therefore much greater than other more common materials.

The plate needs to be heated slowly and a very low flame is sufficient to keep the desired temperature constant; this also allows a more uniform cooking of all foods. To obtain better results and retain the heat longer, it is necessary that the plates in natural stones are of a certain thickness (at least 2 centimeters).

The natural stone plates also allow cooking with the flame off; once high temperatures have been reached, the heat will be released gradually for at least an hour. In this case, thicker plates will be able to retain and release heat more efficiently and for longer.

One of the biggest advantages of soapstone plates is that you can cook without oil and butter, adding only spices to give more flavor. They also have excellent non-stick properties, which allow dishes to not burn or stick to the surface. In addition, the plates and pots in soapstone or lava stone are much more durable and durable over time compared to metal or cast iron, keeping all their characteristics unaltered.


How to store the stone plates

When first using soapstone it is necessary to wash it thoroughly with salt water, avoiding using detergents or detergents; the porous surface could in fact absorb the chemicals and release them during cooking. After washing it is also necessary to grease the plate with vegetable oil, leaving it to rest for at least 24 hours before being able to use it, so that the oil is completely absorbed.

When using the soapstone plate it is advisable to heat it gradually and evenly, avoiding that the surface dilates in a non-homogeneous way causing breakage. Soapstone is very sensitive to temperature changes; once the cooking is finished, it is therefore necessary to wait for it to cool naturally before cleaning it, without ever pouring cold water, so as to prevent it from damaging or forming cracks. Cleaning can therefore only be done with natural substances such as water and vinegar or water and lemon; to eliminate any food residues, it is also advisable to use a brush or a scraper.
